For chicken bone broth and chicken stock, you’ll have tasty results if you start with our broth-making pack. We’ve found that by grinding chicken backs, the broth can extract the chicken flavor more quickly compared to cooking whole pieces. The chicken backs we use contain a great mix of meat, bone, and cartilage to create well-balanced broths.
Simply place one pack in approximately 1/2 gallon of water, bring to a boil, and then cover and simmer for as long as you like. We prefer to remove the lid from the pot at the end and reduce the broth to approximately 1 quart of liquid per 1 pound of chicken for a very thick sipping broth. For a soup base, a thinner broth of approximately 1/2 gallon per pound of chicken might be more appropriate. When finished, pour the both through a fine strainer and enjoy a delicious bone broth.
