This is our smaller size prime rib roast, approximately 3.5-4 lbs. If you have a specific size in mind, please let us know and we can try to find a roast that fits your specific needs.
When we prepare prime rib, we like to generously salt the roast and place it on a rack in the refrigerator for up to three days. This dries the surface of the roast. The core of the roast will remain moist, but the outside will finish with an exquisite crust. We roast ours at very low temperatures for hours, and then finish with 15 minutes in the oven at 500 degrees to develop a final sear.
Our cattle are always grass fed and grass finished, and rotationally grazed on the pastures at Wrong Direction Farm. Our cattle never eat grain or grain byproducts and they are free of antibiotics and hormones. Just cows eating the plants that grow in our pastures; it’s really that simple!
