The petite tender is a great little cut. It’s a particularly tender muscle from deep inside the shoulder (anatomically the Teres Major if you care to know). It is shaped like a miniature version of the beef tenderloin, and it grills and broils nicely.
After cooking the entire piece, it can present nicely crosscut into small medallions.
