The pork butt shoulder roast is the cut beloved by barbeque competition champions and pitmasters. It works well in any slow cooked meal, whether your method is slow and smoky over coals or slow and saucy in a pot.
This cut goes by different names, sometimes called the butt, or the Boston butt, or sometimes just the shoulder. It includes the muscles around the shoulder blade area, so for comparison it is anatomically equivalent to the “chuck” in beef.
