The pork eye roast is similar to the more familiar beef eye of round roast, but it is of course much smaller. The pork eye can be oven roasted or grilled.
We recommend cooking until an instant read thermometer registers about 140 degrees, then allowing the cut to rest for a few minutes. Slice evenly into thin portions cut against the grain.
