Dave’s favorite cut of pork for grilling. Just add salt and pepper, then put it on the grill just like you’d do for a beef steak. This cut contains several different muscle groups, so there are differences in taste and texture from one side of the steak to the other, but it is delicious no matter which bite you take.
This steak is sometimes just called a blade steak or a shoulder steak.
